On April 1, members of the Estero Island Garden Club gathered at Diamondhead, a Fort Myers Beach resort, for their annual Spring Luncheon. Diamondhead is right on the beach, and the restaurant Costé overlooks the beach and the waters of the Gulf of Mexico. Our speaker was Monica Lynn, a local writer and photographer, whose passion is animal rescue and advocacy. On this day, she presented a slide and video show about dolphins. She observes them regularly, often by kayak, in Estero Bay, which is an inlet of the Gulf of Mexico. Fort Myers Beach is one of the barrier islands that border this estuary. The estuary is also in Monica’s backyard, so she has easy access to observing the many dolphins that live there, numbering as many as 150. The most popular entrée was Mahi mahi, with asparagus & carrots on a bed of rice.
The most popular dessert was Key Lime Pie, with a dab of whipped cream & a white-chocolate square with the resto name, Costé. All desserts are popular, so House Specialty, Costé Pie, was also a favorite.
